Totally Terrific Taco Lasagna

Serving size: 10-12 / Prep Time: 30 minutes

INGREDIENTS
2 pounds ground turkey
1tsp chili powder
1 tsp black pepper
1 tsp salt
4 cloves of garlic pressed
1/4c cilantro
½ tsp cayenne pepper
1 ½ water
1 T Cornmeal
2 pkgs Corn Tortillas
2 jars (16oz) Chipotle Salsa
1c green onions – sliced
1c black beans
1c green Chiles (Mild) La Preferida
16 oz. light sour cream (mixed with the cilantro)
4 cups Cheddar & Monterey Jack Cheese, Mexican Blend


PREPARATION
Preheat oven to 375 degrees.  In a large saucepan, season the ground turkey with chili powder, black pepper, and salt.  Cook the ground turkey until it's browned and drain.
Add chili powder, garlic, cayenne pepper, chili powder & water.  Simmer uncovered for 10 minutes.  Set aside.  Mix cilantro in the sour cream.  Sprinkle cornmeal in the bottom of the 9’x13” glass baking dish.  Place 6 corn tortillas in the bottom of the pan overlapping slightly.
Layer in the following order:
1c salsa
½ cooked meat mixture (approx 2 cups)
½c green onions & green chiles
1/4c black beans
1c of sour cream mixture
1c combined cheeses

Repeat starting again with 6 tortillas, salsa, meat, green onion & green chiles (first layer only), black beans, sour cream mixture & 1 cup of cheese.  Place 6 tortillas on top, add salsa and top with remaining cheese.  Bake for 40 minutes.  Remove from the oven and let cool approximately 10 minutes.  Enjoy!
