Makes 48 truffles
Ingredients
- 6oz package white chocolate
- 1 cup almond slivers (toasted and finely chopped)
- 8oz cream cheese (room temperature)
- ½ box of vanilla wafers
- 1/4 cup strawberry preserves
Procedure
- In a small saucepan, melt chocolate over low heat.
- In a medium mixing bowl, beat the cream cheese until smooth and creamy.
- Add melted chocolate to cream cheese, mix until smooth.
- Crush 1/2 bag of the cookies to fine crumbs in a resealable plastic bag using a rolling pin or you can use a food processor.
- Add vanilla wafer crumbs and preserves, mixing well.
- Cover and chill mixture for 1 hour.
- Remove from refrigerator and shape mixture into 1” balls (truffles).
- Roll each truffle in almonds.
Store leftover truffles, covered, in refrigerator. |
