White Chocolate Strawberry Truffles

Makes 48 truffles

Ingredients

  • 6oz package white chocolate
  • 1 cup almond slivers (toasted and finely chopped)
  • 8oz cream cheese (room temperature)
  • ½ box of vanilla wafers
  • 1/4 cup strawberry preserves

Procedure

  1. In a small saucepan, melt chocolate over low heat.
  2. In a medium mixing bowl, beat the cream cheese until smooth and creamy.
  3. Add melted chocolate to cream cheese, mix until smooth.
  4. Crush 1/2 bag of the cookies to fine crumbs in a resealable plastic bag using a rolling pin or you can use a food processor.
  5. Add vanilla wafer crumbs and preserves, mixing well.
  6. Cover and chill mixture for 1 hour.
  7. Remove from refrigerator and shape mixture into 1” balls (truffles).
  8. Roll each truffle in almonds.

Store leftover truffles, covered, in refrigerator.
